Rosemary is a member of the mint family. Native to the Mediterranean region, this herb was used in ancient times as the universal symbol of remembrance for those who passed away. It’s also used to symbolize fidelity and remembrance during wedding ceremonies. Today, rosemary is grown in temperate regions throughout the world.


Rosemary contains a substance called carnosol, shown to detoxify substances that can initiate the breast-cancer process. Research has also shown that rosemary suppresses the development of tumors not only in the breast but in the colon, liver, and stomach. It also affects melanoma and leukemia cells. Yet another study showed that rosemary stimulates a liver enzyme that inactivates estrogen hormones—important because excessive estrogen hormones in women can contribute to the growth of breast cancer cells.


In addition, rosemary is anti-inflammatory, antiviral, antimicrobial, antibacterial, and an antioxidant. This amazing herb contains fiber, iron, and calcium. It can also stimulate your immune system, increase circulation, improve digestion, enhance memory, protect your eyes from macular degeneration, and protect the brain from aging and free-radical damage. It’s even believed to stimulate hair growth.


Use fresh or dried rosemary in Mediterranean or Italian dishes, soups, salads, breads, and even desserts.


Safer Cooking With Rosemary


Cooking animal protein (meat, poultry, fish) at high temperatures causes the formation of chemical compounds called heterocyclic amines (HCAs). These compounds are linked to the formation of some cancers. In addition, cooking carbohydrate-rich foods at high temperatures causes the formation of acrylamides (a neurotoxic chemical), which may be linked to cancer.


The good news is that marinating your meat, poultry, or fish in a sauce that contains rosemary has been shown to significantly decrease the number of HCAs formed. Adding rosemary to carbohydrate-rich foods such as bread can significantly reduce the number of acrylamides formed when cooked at high temperatures.
